Seasonality: Thanks to commercial greenhouse growing operations and imports, tomatoes are available year-round in US supermarkets. But their peak season runs from May through October, with some variation depending on your region.

Types: There are over ten thousand varieties of tomatoes, but here are the types you’re most likely to encounter at the supermarket or farmers’ market:

Heirloom: These can be large or small and have an incredibly complex taste and often a lower water content. The larger varieties have characteristically irregular shapes. Heirloom varieties get their name because the seeds have been passed down for generations without hybridization. They come in beautiful colors like green, yellow, purple, black, and striped.

Beefsteak: Very large and bright red. Also known as “slicers,” these are the juicy, meaty-textured tomatoes you’re most likely to find on your restaurant burger or sandwich.

Plum (Roma): These egg-shaped, thick-skinned, medium-size tomatoes can be red or yellow. They have fewer seeds, lower water content, higher acid content, and chewy flesh. Sometimes called Italian plums, paste tomatoes, or processing tomatoes, plum tomatoes are the variety most used for making tomato sauces and tomato paste.

Cherry: Generally, the smaller the tomato fruit, the higher the sugar content. Cherry tomatoes are juicy and sweet and have thin skins. You’ll find them in red, yellow, and orange.

Grape: Similar in size and shape to grapes, these oblong tomatoes have thicker skins than cherry tomatoes and are about half their size. They have a high sugar content, and their flesh is meatier and less watery than that of cherry tomatoes. Popular varieties include Sweet 100 and Super Sweet 100.
